Grilled Watermelon with Yogurt

This is Michael Psilakis's modern take on the traditional Greek combination of watermelon and feta cheese. It features the creamy yogurt he grew up eating in New York's Long Island: "My mom made it at home all the time, and we'd snack on it with honey after school."

 

Ingredients

         

  • 1 cup(s) plain whole-milk Greek yogurt or Homemade Greek Yogurt
  • 2 tablespoon(s) freshly squeezed lemon juice
  • 1 tablespoon(s) white wine vinegar
  • 1 teaspoon(s) coarsely chopped thyme
  • 1 tablespoon(s) extra-virgin olive oil, plus more for drizzling
  • Salt
  • Freshly ground pepper
  • 12  3-inch-long triangles of seedless red watermelon, sliced about 1-inch thick
  • 1/4 cup(s) small mint leaves



 

Directions

 

  1. Light a grill. In a bowl, combine the yogurt with the lemon juice, vinegar, thyme, and 1 tablespoon olive oil. Season with salt and pepper.
  2. Drizzle the watermelon triangles with olive oil and season with salt and pepper. Grill over high heat until nicely charred, about 1 minute per side; transfer to plates. Top the watermelon with the yogurt sauce and season with black pepper. Drizzle with olive oil, garnish with the mint, and serve.

Grilled Watermelon, Tomato, and Goat Cheese Salad

The hotter the grill, the better the grill marks will be on the watermelon slices. John Besh likes to brush spicy Pepper Jelly Vinaigrette over the melon before it's grilled, because the sugars quickly caramelize, imparting incredible flavor. Feel free to substitute whatever vinaigrette you have on hand.

Ingredients

 

  • Pepper Jelly Vinaigrette, for watermelon marinade
  • 6 slice(s) (1/2- to 1-inch thick) seedless watermelon, rind removed
  • 1/3 cup(s) extra-virgin olive oil
  • 2 tablespoon(s) balsamic vinegar
  • 1 clove(s) garlic, minced
  • Pinch of sugar
  • 1 sprig(s) fresh basil, leaves only chopped
  • Salt
  • Freshly ground black pepper
  • 2 cup(s) cherry tomatoes (mixed colors and varieties)
  • 2  handfuls young lettuces (up to 3 handfuls)
  • 1/2 cup(s) fresh goat cheese
  • Fresh herbs such as chives, chive blossoms, chervil, parsley, and dill

 


 

Directions

 

  1. Light a charcoal or gas grill. Brush the Pepper Jelly Vinaigrette over each watermelon slice. Let the watermelon marinate for a few minutes before placing on the hot grill. Grill each side of the watermelon slices for several minutes, remove, cut into large serving pieces, and arrange on a platter.
  2. Whisk together the olive oil, vinegar, garlic, sugar, and basil in a small mixing bowl. Season with salt and pepper. Add the tomatoes and toss to coat them well, then scatter them over the grilled watermelon pieces on the platter. Toss the lettuces in the vinaigrette remaining in the bowl.
  3. Crumble the goat cheese over the tomatoes and watermelon. Scatter the dressed lettuces, then the fresh herbs, over the salad.
