Setting up a Watermelon Garden

A watermelon website just would not be complete without some delicious, mouth-watering watermelon recipes. Here you’ll find dozens of recipes that will be a treat to your pallet, and improve your health.

No more throwing away the rind of your watermelons. High in Citrulline, watermelon rinds can be turned into tasty and healthy salads, desserts, soups, sauces, and cakes.

Watermelon Snack

Start your New Year resolution out with one of the healthiest and tastiest foods – WATERMELON. Ask yourself why you see watermelon at the end of a local mountain bike race or marathon race. Watermelon not only re-hydrates you but may help quench the inflammation that contributes to conditions like asthma, arthritis and cools the muscle burn. Watermelon is packed with some of the most important antioxidants in nature.

Watermelon Boost:

*1cup of cubed watermelon
*2 apples cored and sliced
*1doz grape and/or cup of blueberries
*2 navel oranges or clementines diced
*1cup of yogurt plain or flavored
*Add pecans or cran-raisins if you desire

Fried Watermelon

Watermelon is dipped into a light batter, fried, and topped with powdered sugar for a unique dessert or snack. Like most fried foods, this is best served immediately while crisp.

Prep Time: 15 minutes

Cook Time: 45 minutes Ingredients:

* 1 (6 to 8 pounds) seedless watermelon
* 3 cups vegetable or canola oil for deep-frying
* 1/2 cup cornstarch (cornflour)
* 2 egg whites, beaten
* 2 teaspoons water
* 3/4 cup flour
* Powdered confectioners' sugar for garnish

Preparation: Cut watermelon in half lengthwise. Cut each half again lengthwise into 2. You should have 4 long triangular-shaped pieces. Remove the rinds, cut into 1-inch thick slices, then cut the flesh into about 1-inch triangles. (It is not a science, so do not worry if you have odd shapes.) Heat oil in a deep-fryer or wok to 350 F. Whisk cornstarch with egg whites and water until combined. Dredge watermelon chunks in the flour, then coat with the cornstarch batter. Deep-fry in batches, leaving room in between pieces to properly brown, until watermelon chunks are golden. Remove from oil and drain well. Sprinkle deep-fried watermelon with a dusting of powdered confectioners' sugar to serve.

Watermelon and Feta Salad

The combination of watermelon and feta cheese is a Greek favorite in summer. It's eaten as a snack or a light meal. This variation includes paper-thin slices of red onion, and a touch of balsamic vinegar to turn this fabulous taste combination into a summer salad.

Prep Time: 10 minutes

  • Per serving:
  • 3/4 - 1 cup of cold watermelon, cubed
  • 1/4 cup of feta cheese, crumbled or cubed
  • 1/4 medium red onion, cut in paper-thin slices
  • 1/4 teaspoon of balsamic vinegar or balsamic vinaigrette

Place the watermelon in a bowl, top with most of the onions, then the feta cheese. Place remaining onions on top. Sprinkle with balsamic vinegar, and serve.

This recipe can be made in individual servings or multiplied and served in a large salad bowl.
